A tender and flavorful slow cooker pot roast meal.
Ingredients

- 3–4 pounds beef chuck roast
- 1 tablespoon olive oil
- 4 cups beef broth
- 4 carrots, chopped
- 4 potatoes, diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the beef on all sides.
- Transfer the beef to the slow cooker.
- Add broth, carrots, potatoes, onion, garlic, salt, pepper, thyme, and rosemary.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove the beef and let it rest before slicing.
- Serve with vegetables and gravy.
Notes
- Adjust seasoning to taste.
- For a thicker gravy, mix cornstarch with water and add before serving.
