Ingredients
- Mixed greens – 4 cups
- Cherry tomatoes – 1 cup, halved
- Cucumber – 1, sliced
- Red onion – 1/4, thinly sliced
- Carrots – 1, shredded
- Honey – 2 tablespoons
- Dijon mustard – 1 tablespoon
- Olive oil – 1/4 cup
- Apple cider vinegar – 2 tablespoons
- Salt – to taste
- Pepper – to taste
Instructions
- Wash and dry the mixed greens thoroughly.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and carrots.
- In a separate bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately.
