- 1 rotisserie chicken, shredded
- 2 cups mushrooms, sliced
- 1 onion, chopped

- 4 cups chicken broth
- 1 cup heavy cream

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until softened.
- Add mushrooms; cook until browned.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and thyme; simmer for 10 minutes.
- Stir in heavy cream; heat through.
- Season with salt and pepper to taste.
Notes
- Use any leftover rotisserie chicken.
- Substitute heavy cream with coconut milk for a lighter version.
