- 1 pound chicken breast, diced
- 16 ounces gnocchi
- 1 cup carrots, diced
- 1 cup peas
- 1 cup corn
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned.
- Add onion, garlic, carrots, salt, and pepper. Cook until softened.
- Stir in the broth, heavy cream, and thyme.
- Add gnocchi, peas, and corn. Bring to a boil.
- Reduce heat and simmer for 10 minutes or until gnocchi is cooked.
- Adjust seasoning and serve hot.
Notes
- This dish can be made ahead and reheated.
- Feel free to add other vegetables.
- Top with fresh herbs for extra flavor.
