Description
Omurice is a popular Japanese dish that combines fried rice with an omelet.
Ingredients

- 2 cups cooked rice
- 1 cup chicken, diced
- 1/2 cup peas and carrots
- 1 onion, chopped
- 2 eggs
- 2 tablespoons ketchup
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat oil in a pan over medium heat.
- Sauté onion until translucent.
- Add chicken and cook until no longer pink.
- Stir in peas and carrots, then add cooked rice.
- Mix in ketchup and soy sauce. Season with salt and pepper.
- In a separate bowl, whisk eggs and season with salt.
- Pour eggs into a pan to make an omelet.
- Place the fried rice on one half of the omelet and fold over.
- Serve with extra ketchup on top.
