Mini pecan pies are delightful bite-sized desserts filled with a sweet, rich pecan filling.
Ingredients

- 1 cup chopped pecans
- 1 cup brown sugar
- 1/2 cup corn syrup
- 3 large eggs
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 package mini pastry shells
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix brown sugar, corn syrup, eggs, melted butter, and vanilla.
- Add chopped pecans and stir well.
- Place mini pastry shells on a baking tray.
- Fill each shell with the pecan mixture.
- Bake for 20-25 minutes until filling is set.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- These can be made ahead of time and frozen.
- Adjust sweetness by adding more or less sugar.
