Description
Mini mushroom and gruyere pot pies are savory pastries filled with mushrooms and melted gruyere cheese.
Ingredients

- 1 cup mushrooms, diced
- 1/2 cup gruyere cheese, shredded
- 1/4 cup onion, diced
- 2 tablespoons butter
- 1 tablespoon flour
- 1 cup vegetable broth
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- 1 package puff pastry
Instructions
- Preheat oven to 400°F (200°C).
- In a pan, melt butter over medium heat.
- Add onions and mushrooms, sauté until soft.
- Sprinkle flour over mushrooms, stir to combine.
- Gradually add vegetable broth, stirring until thickened.
- Mix in thyme, salt, and pepper.
- Remove from heat and stir in gruyere cheese.
- Roll out puff pastry and cut into circles.
- Fill each circle with mushroom mixture.
- Seal edges and place on a baking sheet.
- Bake for 20-25 minutes or until golden brown.
Notes
- Use fresh mushrooms for best flavor.
- Can substitute gruyere with another cheese.
