Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup salsa
  • 8 flour tortillas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add black beans, diced tomatoes, corn, and taco seasoning to the skillet. Stir well.
  4. Layer half of the tortillas on the bottom of a baking dish.
  5. Add half of the beef and bean mixture over the tortillas.
  6. Sprinkle with one cup of cheese.
  7. Repeat the layers with remaining tortillas, beef mixture, and cheese.
  8. Pour salsa on top and bake for 25-30 minutes.
  9. Let it cool for a few minutes before serving.
