- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup salsa
- 8 flour tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat.
- Add black beans, diced tomatoes, corn, and taco seasoning to the skillet. Stir well.
- Layer half of the tortillas on the bottom of a baking dish.
- Add half of the beef and bean mixture over the tortillas.
- Sprinkle with one cup of cheese.
- Repeat the layers with remaining tortillas, beef mixture, and cheese.
- Pour salsa on top and bake for 25-30 minutes.
- Let it cool for a few minutes before serving.
