Ingredients

  • 1 cup of brown rice
  • 2 cups of water
  • 1 pound of chicken breast, diced
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1 teaspoon of oregano
  • Salt and pepper to taste
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of fresh parsley, chopped

Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, combine rice and water. Bring to a boil, then reduce heat and simmer for 45 minutes.
  3. In a skillet, heat olive oil over medium heat.
  4. Add diced chicken, garlic powder, paprika, oregano, salt, and pepper. Cook until chicken is golden and cooked through.
  5. In a large bowl, combine cooked rice, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Mix well.
  6. Serve the bowl warm or at room temperature.

  • This bowl can be served with a lemon vinaigrette for added flavor.
