A healthy Mediterranean chicken and rice bowl packed with flavor.
Ingredients
Scale
- 1 cup of brown rice
- 2 cups of water
- 1 pound of chicken breast, diced
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- Salt and pepper to taste
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of fresh parsley, chopped
Instructions
- Rinse the brown rice under cold water.
- In a pot, combine rice and water. Bring to a boil, then reduce heat and simmer for 45 minutes.
- In a skillet, heat olive oil over medium heat.
- Add diced chicken, garlic powder, paprika, oregano, salt, and pepper. Cook until chicken is golden and cooked through.
- In a large bowl, combine cooked rice, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Mix well.
- Serve the bowl warm or at room temperature.
Notes
- This bowl can be served with a lemon vinaigrette for added flavor.
- Feel free to customize with your favorite vegetables.
- Leftovers can be stored in the refrigerator for up to three days.
