- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 package cream cheese (8 oz)
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add the taco seasoning and stir until combined.
- Mix in black beans, corn, and diced tomatoes.
- Reduce heat and add cream cheese, stirring until melted.
- Stir in sour cream and half of the cheddar cheese.
- Transfer to a baking dish and top with remaining cheddar cheese.
- Bake at 350°F for 20 minutes until bubbly.
- Garnish with green onions before serving.
Notes
- Serve with tortilla chips or crackers.
- Can be made ahead and reheated.
- Adjust spice level by choosing mild or hot diced tomatoes.
