Ingredients

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 package cream cheese (8 oz)
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add the taco seasoning and stir until combined.
  3. Mix in black beans, corn, and diced tomatoes.
  4. Reduce heat and add cream cheese, stirring until melted.
  5. Stir in sour cream and half of the cheddar cheese.
  6. Transfer to a baking dish and top with remaining cheddar cheese.
  7. Bake at 350°F for 20 minutes until bubbly.
  8. Garnish with green onions before serving.
