- 1/4 cup BBQ sauce
- 1/4 cup ranch dressing
- 1 cup brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook brown rice according to package instructions.
- Preheat grill or skillet over medium heat.
- Season chicken breasts with salt and pepper.
- Cook chicken for 6-7 minutes on each side until cooked through.
- Brush BBQ sauce onto the chicken and cook for an additional minute.
- Remove chicken from heat and let it rest for a few minutes.
- Chop the chicken into bite-sized pieces.
- In a bowl, combine rice, black beans, corn, and tomatoes.
- Add chopped chicken on top.
- Drizzle ranch dressing and top with avocado slices.
