- 1 cup orzo pasta
- 1 pound shrimp, peeled and deveined
- 1 cup feta cheese, crumbled
- 2 lemons, juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the orzo according to package instructions. Drain and set aside.
- In a bowl, mix shrimp with olive oil, garlic, lemon juice, salt, and pepper.
- Spread shrimp on a baking sheet and roast for 8-10 minutes until cooked through.
- In a large bowl, combine cooked orzo, roasted shrimp, lemon zest, and feta cheese.
- Toss gently and serve garnished with parsley.
