Leftover turkey soup is a delightful way to transform your holiday feast into a warm, comforting meal, using up extra turkey and ingredients while creating a nutritious dish.


Ingredients

  • Leftover turkey: 2 cups, shredded or diced.
  • Carrots: 2 medium, diced.
  • Celery: 2 stalks, diced.
  • Onion: 1 medium, chopped.
  • Garlic: 3 cloves, minced.
  • Chicken broth: 6 cups.
  • Dried thyme: 1 teaspoon.
  • Bay leaves: 2.
  • Salt: to taste.
  • Pepper: to taste.
  • Olive oil: 2 tablespoons (for sautéing).

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened.
  2. Add 3 minced cloves of garlic and sauté for an additional 1-2 minutes.
  3. Add 2 cups of shredded leftover turkey and stir into the pot. Pour in 6 cups of chicken broth, add 1 teaspoon of dried thyme, 2 bay leaves, and season with salt and pepper to taste. Stir well.
  4. Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20-30 minutes.
  5. Taste the soup and adjust seasoning with more salt and pepper if needed. Remove bay leaves before serving.
  6. Ladle the soup into bowls and serve warm.
