Leftover turkey soup is a delightful way to transform your holiday feast into a warm, comforting meal, using up extra turkey and ingredients while creating a nutritious dish.
Ingredients
- Leftover turkey: 2 cups, shredded or diced.
- Carrots: 2 medium, diced.
- Celery: 2 stalks, diced.
- Onion: 1 medium, chopped.
- Garlic: 3 cloves, minced.
- Chicken broth: 6 cups.
- Dried thyme: 1 teaspoon.
- Bay leaves: 2.
- Salt: to taste.
- Pepper: to taste.
- Olive oil: 2 tablespoons (for sautéing).
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened.
- Add 3 minced cloves of garlic and sauté for an additional 1-2 minutes.
- Add 2 cups of shredded leftover turkey and stir into the pot. Pour in 6 cups of chicken broth, add 1 teaspoon of dried thyme, 2 bay leaves, and season with salt and pepper to taste. Stir well.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20-30 minutes.
- Taste the soup and adjust seasoning with more salt and pepper if needed. Remove bay leaves before serving.
- Ladle the soup into bowls and serve warm.
Notes
- Feel free to add extra vegetables like potatoes or green beans.
- For a thicker soup, mix cornstarch with water and stir it in during the last few minutes of cooking.
- Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
