A flavorful Korean BBQ chicken sandwich featuring marinated grilled chicken, fresh vegetables, and a spicy sauce.

- 2 boneless chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 2 hamburger buns
- 1/2 cup shredded cabbage
- 1/4 cup sliced cucumbers
- 1/4 cup sliced carrots
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon mayonnaise
Instructions
- Combine soy sauce, brown sugar, sesame oil, garlic, and ginger in a bowl.
- Marinate the chicken thighs in the mixture for at least 30 minutes.
- Grill the chicken over medium heat for about 6-7 minutes on each side until cooked through.
- While the chicken cooks, mix gochujang and mayonnaise in a small bowl.
- Toast the hamburger buns on the grill for 1-2 minutes.
- Assemble the sandwich by placing grilled chicken on a bun, adding cabbage, cucumbers, and carrots.
- Spread the gochujang mayonnaise on top and close the sandwich.
Notes
- Adjust the spiciness by adding more or less gochujang.
- Serve with pickled vegetables for added flavor.
