- 1 medium butternut squash, peeled and cubed
- 3 tablespoons honey
- 1 cup cranberries, fresh or dried
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the cubed butternut squash with olive oil, honey, salt, and pepper.
- Toss until the squash is evenly coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- Remove from the oven and sprinkle cranberries and feta over the top.
- Return to the oven for an additional 5 minutes.
- Serve warm.
