Description

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 3 tablespoons honey
  • 1 cup cranberries, fresh or dried
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed butternut squash with olive oil, honey, salt, and pepper.
  3. Toss until the squash is evenly coated.
  4. Spread the mixture on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, or until tender and caramelized.
  6. Remove from the oven and sprinkle cranberries and feta over the top.
  7. Return to the oven for an additional 5 minutes.
  8. Serve warm.
