Ingredients

  • 4 chicken breasts
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, Parmesan, parsley, basil, garlic powder, salt, and pepper.
  3. Flatten each chicken breast using a meat mallet.
  4. Spread the ricotta mixture over each chicken breast.
  5. Roll up each chicken breast tightly and secure with toothpicks.
  6. Heat olive oil in a skillet over medium heat.
  7. Brown the chicken rolls on all sides in the skillet.
  8. Transfer to a baking dish and bake for 25-30 minutes until cooked through.
  9. Remove toothpicks and serve.
