- 4 chicken breasts
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, Parmesan, parsley, basil, garlic powder, salt, and pepper.
- Flatten each chicken breast using a meat mallet.
- Spread the ricotta mixture over each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks.
- Heat olive oil in a skillet over medium heat.
- Brown the chicken rolls on all sides in the skillet.
- Transfer to a baking dish and bake for 25-30 minutes until cooked through.
- Remove toothpicks and serve.
Notes
- Let chicken rest for 5 minutes before slicing.
- Serve with a side salad or steamed vegetables.
