Description
A flavorful and crunchy corn salad with Fritos chips.
Ingredients
Scale
- 1 can of corn, drained
- 1 cup of diced tomatoes
- 1 cup of chopped green onions
- 1 cup of shredded cheese
- 1 cup of Fritos corn chips
- 1/2 cup of mayonnaise
- 1 tablespoon of lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine corn, tomatoes, green onions, and cheese.
- Add mayonnaise and lime juice. Mix well.
- Season with salt and pepper.
- Just before serving, fold in Fritos chips.
- Serve chilled or at room temperature.
Notes
- Adjust ingredients according to taste.
- Can be made a few hours in advance.
- Store leftovers in the refrigerator.
