- 4 chicken thighs
- 2 cups carrots, sliced
- 1 cup onions, chopped
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Brown the chicken thighs on both sides, then remove them from the skillet.
- Add onions, garlic, and carrots to the skillet and sauté until softened.
- Add mushrooms and cook for an additional 5 minutes.
- Stir in chicken broth, cream, thyme, salt, and pepper.
- Return the chicken to the skillet and bring to a simmer.
- Transfer the mixture to a casserole dish.
- Bake for 30-35 minutes until the chicken is cooked through.
- Let it rest for 5 minutes before serving.

- Can substitute chicken thighs with breasts.
