Ingredients

  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Brown the chicken thighs on both sides, then remove them from the skillet.
  4. Add onions, garlic, and carrots to the skillet and sauté until softened.
  5. Add mushrooms and cook for an additional 5 minutes.
  6. Stir in chicken broth, cream, thyme, salt, and pepper.
  7. Return the chicken to the skillet and bring to a simmer.
  8. Transfer the mixture to a casserole dish.
  9. Bake for 30-35 minutes until the chicken is cooked through.
