Description

Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium heat.
  4. Sear the roast on all sides until browned.
  5. Remove the roast and set aside.
  6. Add onion and garlic to the pot, sauté until soft.
  7. Add carrots and potatoes to the pot.
  8. Place the roast back in the pot.
  9. Pour in beef broth and Worcestershire sauce.
  10. Add thyme and stir to combine.
  11. Cover and place in the oven.
  12. Cook for 3 to 4 hours until the meat is tender.
