Description
Cuban mojo chicken is a flavorful dish marinated in a citrus garlic sauce.
Ingredients

- 4 chicken thighs
- 1/2 cup orange juice
- 1/4 cup lime juice
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a bowl, combine orange juice, lime juice, garlic, cumin, oregano, salt, and pepper.
- Add chicken thighs to the marinade and coat well.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and discard the marinade.
- Brush chicken with olive oil.
- Grill chicken for 6-7 minutes on each side or until cooked through.
- Let rest for 5 minutes before serving.
Notes
- Serve with rice and black beans.
- Marinate longer for deeper flavor.
- Adjust lime and orange juice for desired tanginess.
