Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (15 oz) tomato sauce
  • 1 cup coconut milk
  • 1/2 cup butter
  • 2 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste
  • Cilantro for garnish

Instructions

  1. Place chicken thighs in the crockpot.
  2. Add chopped onions, garlic, and ginger.
  3. Pour in the tomato sauce and coconut milk.
  4. Add butter, garam masala, cumin, paprika, and salt.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, shred the chicken in the sauce.
  8. Serve with rice and garnish with cilantro.
