Ingredients

  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked rice, carrots, cucumbers, bean sprouts, green onions, and cilantro.
  2. In a separate bowl, whisk together soy sauce, peanut butter, sesame oil, honey, rice vinegar, ginger, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with roasted peanuts and sesame seeds.
  5. Serve immediately or chill for 30 minutes before serving.
