- 1 can black beans, rinsed and drained
- 1 cup shredded cheese
- 4 large tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 tablespoons olive oil
- Salt to taste
Instructions
- In a bowl, mash the black beans and mix in cumin, chili powder, and salt.
- Spread the mixture evenly over two tortillas.
- Sprinkle cheese over the black bean mixture.
- Top with the remaining tortillas.
- Heat olive oil in a pan over medium heat.
- Cook each quesadilla for 3-4 minutes on each side until golden brown.
- Cut into wedges and serve warm.
