Ingredients

- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1/4 cup peanut butter
- 2 servings of ramen noodles
- 1 cup sliced mushrooms
- 1 cup spinach
- 1/2 cup chopped green onions
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
Instructions
- Heat sesame oil in a pot over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add mushrooms and cook until soft.
- Pour in vegetable broth and bring to a boil.
- Stir in miso paste and peanut butter until smooth.
- Add ramen noodles and cook according to package instructions.
- Mix in spinach and green onions, cooking until spinach wilts.
- Stir in soy sauce and serve hot.
Notes
- Adjust the consistency by adding more broth if needed.
- Top with additional green onions for garnish.
- This dish can be stored in the refrigerator for up to 3 days.
