- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup heavy cream
- 1 package cheese ravioli
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent.
- Stir in garlic and cook for 1 minute.
- Add chicken broth and diced tomatoes, bring to a boil.
- Reduce heat and stir in heavy cream and Italian seasoning.
- Add ravioli and cook until tender, about 5-7 minutes.
- Mix in fresh spinach and cook until wilted.
- Season with salt and pepper before serving.
Notes
- Use homemade or store-bought ravioli.
- Adjust thickness by adding more or less broth.
- Top with grated parmesan cheese if desired.
