- 2 boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the fettuccine pasta according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper and add to the skillet.
- Cook chicken for 6-7 minutes on each side until cooked through. Remove and slice.
- Add garlic to the skillet and sauté for 1 minute.
- Stir in sun-dried tomatoes and spinach, cooking until spinach wilts.
- Pour in heavy cream and bring to a simmer.
- Add Parmesan cheese and stir until melted.
- Add cooked pasta and sliced chicken to the skillet, mixing well.
- Serve warm.

- Feel free to add more vegetables such as bell peppers or mushrooms.
- Adjust the amount of garlic for your taste preference.
