Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine chicken, black beans, corn, and diced tomatoes.
  2. Add taco seasoning and chicken broth. Stir well.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in heavy cream and cheese. Cook until cheese melts.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.
