Ingredients

- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, combine chicken, black beans, corn, and diced tomatoes.
- Add taco seasoning and chicken broth. Stir well.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream and cheese. Cook until cheese melts.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- Use rotisserie chicken for quicker preparation.
- Adjust spice level with more or less taco seasoning.
- Top with avocado or sour cream for extra creaminess.
