- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons cajun seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned.
- Add onion, garlic, bell pepper, carrots, and celery. Sauté until vegetables soften.
- Pour in chicken broth and bring to a boil.
- Stir in heavy cream and cajun seasoning. Simmer for 15 minutes.
- Season with salt and pepper.
- Garnish with parsley before serving.
Notes
- Adjust the spice level with more or less cajun seasoning.
- Serve with crusty bread for a complete meal.
