Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion, garlic, bell pepper, carrots, and celery. Sauté until vegetables soften.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in heavy cream and cajun seasoning. Simmer for 15 minutes.
  6. Season with salt and pepper.
