Description

Cream of Potato Soup is a delightful dish that warms the heart and soul. This creamy, rich soup is perfect for chilly days or when you need a little pick-me-up.


Ingredients

  • Potatoes: Four medium-sized potatoes, peeled and diced
  • Onion: One medium onion, chopped finely
  • Garlic: Three cloves of minced garlic
  • Vegetable Broth: Four cups of vegetable broth
  • Heavy Cream: One cup of heavy cream
  • Butter: Two tablespoons of butter
  • Salt and Pepper: To taste
  • Fresh Herbs: Chives or parsley for garnish

Instructions

  1. Heat a large pot over medium heat and melt the butter.
  2. Add the chopped onion and minced garlic, sauté for about five minutes until translucent.
  3. Add the diced potatoes and stir, cooking for an additional two to three minutes.
  4. Pour in the vegetable broth, bring to a boil, then reduce to a simmer and cover for 15-20 minutes until potatoes are tender.
  5. Blend the soup until smooth using an immersion blender or countertop blender.
