Ingredients
- Potatoes: Four medium-sized potatoes, peeled and diced
- Onion: One medium onion, chopped finely
- Garlic: Three cloves of minced garlic
- Vegetable Broth: Four cups of vegetable broth
- Heavy Cream: One cup of heavy cream
- Butter: Two tablespoons of butter
- Salt and Pepper: To taste
- Fresh Herbs: Chives or parsley for garnish
Instructions
- Heat a large pot over medium heat and melt the butter.
- Add the chopped onion and minced garlic, sauté for about five minutes until translucent.
- Add the diced potatoes and stir, cooking for an additional two to three minutes.
- Pour in the vegetable broth, bring to a boil, then reduce to a simmer and cover for 15-20 minutes until potatoes are tender.
- Blend the soup until smooth using an immersion blender or countertop blender.
- Return the soup to low heat, stir in the heavy cream, and season with salt and pepper.

Notes
- For a vegan version, replace heavy cream with coconut or cashew cream.
