Crack Chicken Stuffed Baked Potatoes for a Cozy Dinner

Ingredients

  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for about 45-60 minutes until tender.
  4. In a bowl, mix shredded chicken, ranch seasoning, cream cheese, and half of the cheddar cheese.
  5. Once potatoes are done, cut them open and fluff the insides with a fork.
  6. Stuff the potato skins with the chicken mixture.
  7. Top with remaining cheddar cheese, bacon, and green onions.
  8. Return to the oven for an additional 10-15 minutes until cheese is melted.

Notes

  • You can substitute the chicken with turkey.
