- 4 large russet potatoes
- 2 cups cooked chicken, shredded
- 1 packet ranch seasoning mix
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for about 45-60 minutes until tender.
- In a bowl, mix shredded chicken, ranch seasoning, cream cheese, and half of the cheddar cheese.
- Once potatoes are done, cut them open and fluff the insides with a fork.
- Stuff the potato skins with the chicken mixture.
- Top with remaining cheddar cheese, bacon, and green onions.
- Return to the oven for an additional 10-15 minutes until cheese is melted.
Notes
- You can substitute the chicken with turkey.
- Adjust the seasoning according to your taste.
- For a spicier version, add jalapeños to the filling.
