A delicious coconut chicken rice bowl with fresh ingredients.
Ingredients

- 1 cup jasmine rice
- 1 can (14 oz) coconut milk
- 2 chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice under cold water.
- In a pot, combine rice and coconut milk. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
- In a skillet, heat olive oil over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add diced chicken, cook until no longer pink.
- Add broccoli and bell pepper, cook until tender.
- Season with salt and pepper.
- Serve chicken mixture over coconut rice.
- Garnish with green onions.
Notes
- You can add other vegetables as you prefer.
- Adjust seasoning to taste.
- This dish can be served hot or cold.
