Ingredients

  • 1 cup jasmine rice
  • 1 can (14 oz) coconut milk
  • 2 chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice under cold water.
  2. In a pot, combine rice and coconut milk. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
  4. In a skillet, heat olive oil over medium heat.
  5. Add garlic and ginger, sauté for 1 minute.
  6. Add diced chicken, cook until no longer pink.
  7. Add broccoli and bell pepper, cook until tender.
  8. Season with salt and pepper.
  9. Serve chicken mixture over coconut rice.
  10. Garnish with green onions.
