Ingredients

  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon for streusel
  • 2 tablespoons butter, melted for streusel

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a loaf pan.
  3. In a bowl, mix the grated zucchini, sugar, oil, eggs, and vanilla.
  4. In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. If using, fold in chopped walnuts.
  7. Pour the batter into the prepared loaf pan.
  8. In a small bowl, mix brown sugar, flour, cinnamon, and melted butter to make streusel.
  9. Sprinkle the streusel over the batter.
  10. Bake for 50-60 minutes or until a toothpick comes out clean.
  11. Let it cool before slicing.
