Ingredients

- 2 cups grated zucchini
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts (optional)
- 1/4 cup brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon for streusel
- 2 tablespoons butter, melted for streusel
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a loaf pan.
- In a bowl, mix the grated zucchini, sugar, oil, eggs, and vanilla.
- In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture until just combined.
- If using, fold in chopped walnuts.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix brown sugar, flour, cinnamon, and melted butter to make streusel.
- Sprinkle the streusel over the batter.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- This bread freezes well; wrap tightly for freezing.
- Adjust cinnamon to taste.
