A healthy low carb casserole with chicken, spinach, and mushrooms.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup cream cheese
- 1 cup shredded cheese (your choice)
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine cooked chicken, spinach, mushrooms, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
- Mix well until all ingredients are thoroughly combined.
- Transfer the mixture to a greased casserole dish.
- Top with shredded cheese.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- This dish can be made ahead and stored in the refrigerator.
- Reheat in the oven or microwave before serving.
- Feel free to add other low carb vegetables.
