Ingredients

  • 4 chicken quarters
  • 2 cups shallots, peeled and halved
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mixed olives, pitted and chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, salt, and pepper.
  3. Add chicken quarters and shallots to the bowl, coating them well.
  4. Place chicken and shallots on a baking sheet.
  5. Roast for 45-50 minutes or until chicken reaches 165°F (74°C).
  6. While chicken cooks, combine olives, parsley, and lemon juice in a bowl.
  7. Once chicken is done, let it rest for a few minutes.
  8. Serve chicken with shallots and top with olive salad.
