- 4 chicken quarters
- 2 cups shallots, peeled and halved
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mixed olives, pitted and chopped
- 1/4 cup fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, salt, and pepper.
- Add chicken quarters and shallots to the bowl, coating them well.
- Place chicken and shallots on a baking sheet.
- Roast for 45-50 minutes or until chicken reaches 165°F (74°C).
- While chicken cooks, combine olives, parsley, and lemon juice in a bowl.
- Once chicken is done, let it rest for a few minutes.
- Serve chicken with shallots and top with olive salad.
