  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, and sauté until softened.
  3. Add chicken and cook until browned.
  4. Add pumpkin, ginger, salt, pepper, and paprika.
  5. Pour in chicken broth and bring to a simmer.
  6. Cover and cook for 20 minutes or until pumpkin is tender.
  7. Garnish with parsley before serving.
