Chicken Chasseur is a classic French dish featuring chicken cooked in a rich sauce with mushrooms and herbs.
Ingredients

- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 200g mushrooms, sliced
- 1 cup chicken stock
- 1 cup white wine
- 1 tablespoon tomato paste
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Season chicken thighs with salt and pepper and brown on both sides.
- Remove chicken and set aside.
- Add onion and garlic to the pan, sauté until soft.
- Add mushrooms and cook until browned.
- Stir in tomato paste, then add white wine and chicken stock.
- Return chicken to the pan and simmer for 30 minutes.
- Sprinkle with fresh parsley before serving.
Notes
- Serve with crusty bread or over rice.
- Can substitute chicken breasts if preferred.
