Ingredients

- 2 large eggs
- 1/2 cup cooked chicken, shredded
- 1/4 cup bell pepper, diced
- 1/4 cup onion, diced
- 1/4 cup shredded cheese
- 1 large tortilla
- Salt and pepper to taste
- 1 tablespoon oil
Instructions
- In a skillet, heat oil over medium heat.
- Add diced onion and bell pepper, sauté until soft.
- In a bowl, whisk eggs and season with salt and pepper.
- Pour eggs into the skillet, scramble until cooked.
- Add shredded chicken and cheese, mix until cheese melts.
- Place mixture in the center of a tortilla.
- Fold the sides and roll up to form a burrito.
- Serve warm.
