A traditional beef stew known for its rich flavor.
Ingredients

- 2 pounds beef chuck, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1 cup beef broth
- 1 tablespoon cumin
- 1 tablespoon oregano
- Salt and pepper to taste
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- Add onion, garlic, and bell pepper to the pot; sauté until soft.
- Stir in tomatoes, beef broth, cumin, oregano, salt, pepper, and bay leaf.
- Return beef to the pot.
- Cover and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaf and serve warm.
Notes
- Serve with rice or tortillas.
- Adjust spices according to taste.
- Can be made a day in advance for better flavor.
