Description

Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 cup beef broth
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion, garlic, and bell pepper to the pot; sauté until soft.
  5. Stir in tomatoes, beef broth, cumin, oregano, salt, pepper, and bay leaf.
  6. Return beef to the pot.
  7. Cover and simmer for 1.5 to 2 hours until beef is tender.
  8. Remove bay leaf and serve warm.
