Ingredients

  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, powdered sugar, and granulated sugar.
  3. In another bowl, cream the butter, then add the egg and vanilla.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Roll dough into small balls and flatten them slightly on a baking sheet.
  6. Bake for 10-12 minutes, then let them cool.
  7. In a bowl, mix ricotta and chocolate chips until well combined.
  8. Once cookies are cooled, fill them with the ricotta mixture.
  9. Garnish with chopped pistachios.
