Delicious cannoli cookies filled with sweet ricotta and chocolate chips.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, powdered sugar, and granulated sugar.
- In another bowl, cream the butter, then add the egg and vanilla.
- Combine the wet and dry ingredients until a dough forms.
- Roll dough into small balls and flatten them slightly on a baking sheet.
- Bake for 10-12 minutes, then let them cool.
- In a bowl, mix ricotta and chocolate chips until well combined.
- Once cookies are cooled, fill them with the ricotta mixture.
- Garnish with chopped pistachios.
Notes
- Store cookies in an airtight container.
- Best enjoyed fresh but can be kept for up to 3 days.
