- 8 oz penne pasta
- 2 cups cooked chicken, shredded
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 cup chicken broth
- 2 tbsp Cajun seasoning
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large bowl, mix cream cheese, chicken broth, and Cajun seasoning until smooth.
- Add the shredded chicken, diced tomatoes, and half of the cheddar cheese to the mixture. Stir in the cooked pasta.
- Season with salt and pepper.
- Transfer the mixture to a baking dish. Top with remaining cheddar cheese and green onions.
- Bake for 25-30 minutes until bubbly and cheese is golden.
- Let it cool for a few minutes before serving.
Notes
- For extra spice, add more Cajun seasoning.
- You can use any pasta shape you prefer.
- Leftovers can be stored in the refrigerator for up to 3 days.
