  • 8 oz penne pasta
  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the penne pasta according to package instructions. Drain and set aside.
  3. In a large bowl, mix cream cheese, chicken broth, and Cajun seasoning until smooth.
  4. Add the shredded chicken, diced tomatoes, and half of the cheddar cheese to the mixture. Stir in the cooked pasta.
  5. Season with salt and pepper.
  6. Transfer the mixture to a baking dish. Top with remaining cheddar cheese and green onions.
  7. Bake for 25-30 minutes until bubbly and cheese is golden.
  8. Let it cool for a few minutes before serving.

Notes

  • For extra spice, add more Cajun seasoning.
  • You can use any pasta shape you prefer.
