Delicious butter roasted carrots that are simple to make.
Ingredients

- 2 lbs carrots, peeled and cut into sticks
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh thyme, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, mix melted butter, olive oil, salt, pepper, and thyme.
- Add carrots to the bowl and toss until evenly coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Remove from oven and serve warm.
Notes
- Adjust cooking time based on carrot thickness.
- You can substitute thyme with rosemary if desired.
- Serve as a side dish with any main course.
