  • 1 tbsp fresh thyme, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix melted butter, olive oil, salt, pepper, and thyme.
  3. Add carrots to the bowl and toss until evenly coated.
  4. Spread the carrots on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, stirring halfway through.
  6. Remove from oven and serve warm.
