A classic beef stew made in a crock pot, perfect for chilly evenings and family gatherings.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Trim excess fat from the beef chuck and cut into 1-inch cubes. Season with salt and pepper.
- Optional: Sear the beef in a skillet over medium-high heat until browned on all sides.
- Add the beef to the crock pot along with sliced carrots, diced potatoes, chopped onions, and minced garlic.
- In a separate bowl, mix beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
- Pour the liquid mixture over the ingredients in the crock pot.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- After cooking, taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
- Serve warm with crusty bread or over rice.
Notes
- For added flavor, consider adding a splash of red wine.
- Peas or green beans can be added in the last 30 minutes of cooking.
- Leftover stew can be stored in the refrigerator for up to three days or frozen for up to three months.
