A classic beef stew made in a crock pot, perfect for chilly evenings and family gatherings.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck and cut into 1-inch cubes. Season with salt and pepper.
  2. Optional: Sear the beef in a skillet over medium-high heat until browned on all sides.
  3. Add the beef to the crock pot along with sliced carrots, diced potatoes, chopped onions, and minced garlic.
  4. In a separate bowl, mix beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves.
  5. Pour the liquid mixture over the ingredients in the crock pot.
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  7. After cooking, taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
  8. Serve warm with crusty bread or over rice.

  • For added flavor, consider adding a splash of red wine.
  • Peas or green beans can be added in the last 30 minutes of cooking.
