Ingredients

- 2 chicken breasts
- 1 cup BBQ sauce
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup corn
- 1 avocado, sliced
- 2 green onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- While sweet potatoes cook, grill or bake chicken breasts until fully cooked.
- Brush chicken with BBQ sauce and let it rest for 5 minutes.
- Slice chicken into strips.
- Assemble your bowl: add sweet potatoes, corn, chicken, avocado, and green onions.
- Drizzle with additional BBQ sauce if desired.
