Ingredients

- 2 medium sweet potatoes
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 1/2 cup corn, cooked
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube sweet potatoes.
- Toss sweet potatoes with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- While sweet potatoes are roasting, mix shredded chicken with BBQ sauce in a bowl.
- Once sweet potatoes are done, assemble your bowls.
- Divide roasted sweet potatoes, BBQ chicken, black beans, corn, and avocado among bowls.
- Garnish with cilantro before serving.
