A flavorful and nutritious BBQ chicken sweet potato bowl.


Ingredients

  • 2 medium sweet potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1/2 cup corn, cooked
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube sweet potatoes.
  3. Toss sweet potatoes with olive oil, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  5. While sweet potatoes are roasting, mix shredded chicken with BBQ sauce in a bowl.
  6. Once sweet potatoes are done, assemble your bowls.
  7. Divide roasted sweet potatoes, BBQ chicken, black beans, corn, and avocado among bowls.
  8. Garnish with cilantro before serving.
