Ingredients

  • 2 chicken breasts
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup broccoli florets

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. Toss sweet potatoes with olive oil, paprika, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  5. While sweet potatoes roast, season chicken breasts with salt and pepper.
  6. Cook chicken in a skillet over medium heat for 6-7 minutes per side.
  7. Add BBQ sauce to the skillet and cook for an additional 2-3 minutes.
  8. Steam broccoli until tender.
  9. Assemble bowls with sweet potatoes, sliced chicken, and broccoli.
