A simple and delicious chicken piccata recipe from Barefoot Contessa.
Ingredients

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- 1/2 cup fresh lemon juice
- 1 cup chicken stock
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Season chicken with salt and pepper.
- Dredge chicken in flour and shake off excess.
- Heat oil and butter in a large skillet over medium-high heat.
- Add chicken and cook until golden brown, about 3-4 minutes per side.
- Remove chicken from skillet and set aside.
- Add lemon juice, chicken stock, and capers to the skillet.
- Bring to a boil, scraping up brown bits from the bottom.
- Return chicken to the skillet and simmer for 5 minutes.
- Sprinkle with parsley before serving.

- Serve with pasta or rice for a complete meal.
- Adjust lemon juice according to taste.
