Ingredients

- 8 oz pasta
- 1 lb sausage
- 1 medium butternut squash, peeled and diced
- 2 cups spinach
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add sausage and cook until browned.
- Add garlic and squash, cooking until squash is tender.
- Pour in chicken broth and bring to a simmer.
- Add spinach and cooked pasta, stirring to combine.
- Stir in Parmesan cheese, salt, and pepper.
- Serve warm.

- Substitute sausage with turkey or chicken sausage for a lighter option.
- Add nuts for extra crunch if desired.
