A hearty and flavorful beef stew inspired by Anthony Bourdain’s culinary style.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Coat beef pieces with flour.
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic, sauté until softened.
- Add carrots and potatoes, stir well.
- Return beef to the pot.
- Add beef broth, red wine, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2-3 hours, stirring occasionally.
- Season with salt and pepper before serving.
Notes
- Serve with crusty bread.
- Can be made a day ahead and refrigerated.
- Taste improves after sitting overnight.
