Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Coat beef pieces with flour.
  2. Heat olive oil in a large pot over medium heat.
  3. Add beef and brown on all sides.
  4. Remove beef and set aside.
  5. Add onion and garlic, sauté until softened.
  6. Add carrots and potatoes, stir well.
  7. Return beef to the pot.
  8. Add beef broth, red wine, tomato paste, thyme, and rosemary.
  9. Bring to a boil, then reduce heat to low.
  10. Cover and simmer for 2-3 hours, stirring occasionally.
  11. Season with salt and pepper before serving.

Notes

  • Serve with crusty bread.
  • Can be made a day ahead and refrigerated.
