Ingredients

- Mayonnaise: 1 cup (240 ml)

- Celery: 1 cup, diced (about 2-3 stalks)
- Onion: 1/2 cup, finely chopped (about 1 small onion)
- Hard-boiled eggs: 4, peeled and sliced
- Salt and pepper: To taste
- Paprika: For garnish, to taste
Instructions
- Wash the potatoes thoroughly and cut them into uniform cubes.
- Place the cubed potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer for 10-15 minutes until tender but firm.
- Drain the potatoes and allow them to cool for 10-15 minutes.
- In a large mixing bowl, combine mayonnaise and mustard, stirring until well blended. Season with salt and pepper.
- Gently fold the cooled potatoes into the mayonnaise mixture along with diced celery and chopped onion.
- Fold in the sliced hard-boiled eggs, reserving some for garnish if desired.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Before serving, stir gently and transfer to a serving bowl. Garnish with reserved egg slices and paprika.
